ABSTRACT The main objective of this study was to investigate the efficiency of irradiated ginger (0 and 10 kGy) against chronic ethanol mediated toxicity in rats. Chemical composition of the ginger (moisture, ash, crude protein, crude lipid, total carbohydrate, crude fiber and total phenols) was evaluated. HPLC chromatography for analysis of ginger showed that the number of identified phenols was 22 compounds (natural anti-oxidants). Thirty six male rats were equally and randomly categorized into six groups and ethanol (2g/kg body weight) was daily administered to rats via stomach tube for 6 weeks. The results obtained revealed that the administration of ethanol significantly increased serum liver enzymes activities; AST, ALT and ALP, as well as serum total bilirubin, increasing lipid peroxides (malondialdhyde; MDA). Significant decrease was observed in blood anti-oxidant enzymes activities (superoxide dismutase; SOD and catalase; CAT), concentration of reduced glutathione (GSH), also in total protein, albumin and glucose. The results obtained revealed that feeding rats on diet containing either raw or irradiated ginger (1% w/w) induced a significant improvement in the above mentioned parameters. There was a non-significant difference between non-irradiated and irradiated ginger, thus, it could be concluded that irradiated ginger didn’t affect the physiological functions. Moreover, supplementation of ginger in diet can offer protection against free radical mediated oxidative stress in hepatotoxicity.
